Doghouse Distillery to Launch London's First Ever Bourbon-Style Whisky

Doghouse Distillery is set to take on US whisky producers with the launch of its Debt Collector Whisky

The Doghouse Distillery is set to enter the world whisky arena with the launch of its “Debt Collector Whisky”, London's first 'bourbon-style' whisky.

Seven years in the making, Debt Collector is believed to be the only full ‘grain to bottle’ bourbon-style whisky currently available in the UK, with every step of the production process taking place at the Battersea distillery, from milling, mashing and fermentation to copper pot distillation and maturation. 

Debt Collector challenges traditional British whisky-making conventions by meticulously following authentic bourbon production methods, marking a new era in the London spirits landscape. Made with a mash of 75% corn, complemented by malted barley and rye, this innovative spirit is aged for a minimum of three years in virgin, charred American oak casks, delivering rich notes of vanilla, caramel, and warming spice (£49.95 Doghouse Distillery.com).

The production process adheres to traditional bourbon methods with two key differences: Doghouse is based in London rather than America, and they lauter the mash for 'off grain' fermentation while implementing a sour mashing process that enhances both flavour consistency and helps the distillery reach its sustainability goals.

"I love bourbon," says Founder and Managing Director Braden Saunders who was responsible for developing the concept,

"The Scots do Scotch so well, the Irish similarly have their own style and they've been doing it for centuries. If we were in Europe, making a Scotch-style whisky would entice me, but in London I don't have that same feeling. I think making something multi-grain, taking inspiration from America, is much more interesting.  Particularly when most other new distilleries are also making single malts, it gives us a level of differentiation in the space."

 Saunders adds,

"High corn produces an easy, mellow whisky. Looking at cocktails, very few are made with Scotch. Bourbon is much more approachable and inclusive and fun in that sense."

Following the 2023 moonshine releases (unaged and 1 year cask aged corn spirit), Debt Collector is bottled at 50% ABV or ‘100 proof’ (as a nod to its origins) and represents seven years of dedication to the craft of whisky-making in the heart of London.

The spirit's di1stinctive branding pays homage to America's Prohibition era where corn whisky or bourbon came to the fore. The striking label artwork, brought to life by artist, Stefan Koppel, features a skeletal gangster character executed in the same airbrush art style found on custom Harley-Davidson fuel tanks and ‘hot-rod’ cars. This visual narrative celebrates the rebellious spirit of speakeasies and moonshine culture that flourished during those historic times where booze was cash and cash was king.  Cue the Blues Rock playlist and pour a stiff one!
